Tasty and nutritious, yet not too sweet, these cookies can be eaten in moderation by those of us who are trying to keep our blood sugar down.
Ingredients:
- 3/4 cup butter
- 3/4 cup brown sugar
- 1/2 cup sugar
- 1 egg
- 2 tsp vanilla
- 1 tsp cinnamon
- 2 Tbsp hot water
- 3/4 tsp baking soda
- 3/4 cup flour
- 3 cups rolled oats
- 1/2 cup chopped walnuts
- 1/2 cup dried currants
- 1/2 cup chocolate chips
Method:
Cream the butter, gradually adding in the sugars. Beat in the egg. Dissolve the baking soda in the hot water and beat that in. Add vanilla and cinnamon. Gradually stir in the flour, then the oats, nuts, currants, and chocolate chips. Drop spoonfuls onto cookie sheets. Bake in preheated 350 degree oven for about 12 minutes until toasty around the edges.
Great with a cup of cold milk or your favourite hot drink in the company of friends or a good book!
